Large HE/FE College
The College was managing their own In-House catering department that was operating at a substantial loss every year. This loss did not include additional College administration costs.
The College was also in the process of a £60 million new build on a new greenfield site and wanted to make sure all support services were reviewed to ensure high expectations could be delivered in the the new 'state of the art' college.
The following services were provided to the College;

Operational Review including recommendations for delivering a state of the art catering service.

Following the Review it was agreed the College would benchmark the provision through a Food-service Tender.

In order to meet the College's objectives they decided to out source the catering service at the new College.

In addition, we also provided design and tendering for the College student training kitchen.
Secondary School
The school is a mixed comprehensive with 1500 students and had always contracted their catering services with the Local Authority appointed contractor. They were in the early stages of planning for a new £1.65 million dining facility and needed advise on the best way forward.
The following consecutive services were provided to the school;

Review and Business Development Report, this advised the school the best options for delivering the catering service in the new facility. The schools preferred option was to operate In-House but following the finding of the review they decided to test the market and carry out a Food-service Tender. The service was out sourced.

Design and project manage the installation of the kitchen and service counter. The brief was to have a modern kitchen that could accommodate student training, a service counter that could serve over 900 students in under 50 minutes and a dining area that could seat 500 students at one time. The facility was also to be used for community usage.

The school was offered several design options that accommodated several different food-service styles. A Bio-metric cashless system was also installed.
